Birria tacos at home
For the Beef Birria:
4 pounds beef chuck, shanks, bottom roast, short ribs, or combination
salt and pepper
For the Adobo Sauce:
6 dried whole guajillo chiles
4 dried whole ancho chiles
1 cup beef broth
1 white or yellow onion
6 cloves garlic (optional: for best flavor roast the garlic)
2 chipotles with 1 tablespoon adobo sauce
3 tablespoons apple cider vinegar
3 tablespoons tomato paste
2 tablespoons brown sugar
1 1/2 teaspoons ground cumin
1 1/2 teaspoons dried Mexican oregano
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground cinnamon
pinch of ground cloves
1 bay leaf
For the Birria Tacos:
16 corn or flour tortillas
2 cups shredded or crumbled cheese (oaxaca, queso fresco, cotija, or Monterey jack)
diced onion
chopped cilantro
fresh lime wedges
optional accompaniments for serving: Mexican crema or sour cream, guacamole, salsa, pickled jalapenos, etc).
Elote: Corn recipie:
4 ears corn, shucked
¼ cup melted butter
¼ cup mayonnaise
½ cup grated cotija cheese
Tajin seasoning
4 wedges lime (Optional)
- Grill the corn or boil
Mix corn, mayo brush on the corn top with cotija cheese and tajin squeeze lime on if you like
Birria Directions:
cut chuck roast into smaller chunks I did smaller cubes
I add a tbsp of oil and brown them in the pot on each side
Fill up the pot with water covering the meat add in 1/2 or whole onion, pinch of salt and 2 bay leaves
Boil for an hour make sure to skim the fat and gunk from the top
In a smaller pan fry up a few guajillo and chile de Arbol (don’t like it too spicy remove the seeds more spicy leave them in) add 4-5 pieces of garlic fry until fragrant
Take the peppers, garlic place in a blender along with 1-2 cups of the water you used to boil the meat, add the onion and 1-2 tomatoes (I roasted mine in the oven but you can add it raw as well) add 1 cube of beef bouillon and blend
Then take that mixture add it to the pot and put on low for 2-4 hours until meat is tender
To assemble dip your tortilla in the sauce from the pot place on a frying pan or griddle add cheese, meat fold in half flipping once one side is golden brown to the other
For the consume remove some of the stock from the pot add cilantro, lime and raw onion and enjoy !
