cozy chicken enchilada soup ✨
y’all…i made this last night and let me tell you! so so yummy. i used leftover enchilada filling that i had made, but it’s so easy it could be made completely from scratch too.
what you’ll need:
- about 1 pound of chicken breast
- 1 onion, diced
- 4 (or so) cloves of garlic, minced
- about half a zucchini, diced
- about half a yellow squash, diced
- 1 can of diced tomatoes
- 1 can of black beans, drained
- 1 can of enchilada sauce
- 1 cup of water
- 1 bouillon cube, vegetable or chicken
- cumin to taste
- adobo to taste
- salt and pepper to taste
- olive oil
- about a cup of shredded cheddar cheese
- a healthy handful of chopped cilantro
- sour cream or greek yogurt

FOR THE CHICKEN:
1. preheat oven to 350
2. place chicken into a glass dish
3. light oil both sides of the chicken
4. season with cumin, adobo, and anything else you like. measure with your heart here, that’s what i do. both sides!
5. bake for 25-30 minutes or until done, and allow to cool
6. using your preferred method, shred the chicken. i use two forks to pull it apart. stir it in the dish after shredding to allow it to soak up the extra liquid

SOUP TIME:
1. to a pot, add olive oil and heat over medium heat
2. add onions and garlic, allow to cook until soft and fragrant, about 5 minutes
3. add your zucchini and squash, allow to cook for a bit with the onions and garlic, about another 5 minutes
4. add your beans, diced tomatoes, cup of water, bouillon cube, enchilada sauce, and shredded chicken. stir until well combined
5. throw in a small handful of chopped cilantro, and a handful of shredded cheese. stir again until cheese is melted
6. allow to come to a simmer, and lower the heat. simmer for 15-20 minutes or until flavors are well combined. season and taste as you go
7. once flavors are combined, serve it up! garnish with shredded cheese, fresh cilantro, and sour cream. feel free to add anything else you like!
