Goat Karahi

•. 2 tbsp coriander powder

• 1 tbsp Kashmiri chili powder

• 1½ tsp cumin

• 1 tsp black pepper

• 1 tbsp granulated garlic

• 1 tsp crushed dried fenugreek leaves

• ½ tsp ajwain

• 1 bay leaf

• ½ tsp cinnamon

• 4 cloves

• 2-3green cardamom pods

• 1 black cardamom

• 1–1½ tsp salt or more if needed

Garnish

• Fresh cilantro

• Ginger strips

• Green chilies

• Lemon (optional)

Instructions

1. Heat oil in a large pot over medium heat.

2. Add sliced onion and cook until translucent/light golden.

3. Add the goat meat and brown it well for several minutes.

4. Add the whole spices:

• bay leaf

• cloves

• green cardamom

• black cardamom

5. Pour in 2–3 cups water. Cover and cook on low heat for 2–3 hours until the goat becomes tender. Stir occasionally.
