Salsa verde chicken tacos 🌮
Made the salsa verde chicken in the crockpot and decided to make tacos with it. This shredded chicken will be enough for leftovers. Maybe we’ll serve the leftovers tomorrow over rice with some shredded pepper Jack to mix it up.
🍋🟩 Ingredients
Salsa Verde Chicken:
3 boneless skinless chicken breasts about 2 lbs
2 tsp cumin
juice of 1 lime
16 oz Herdez Salsa verde
Taco Toppings:
sliced avocado
Diced red onion
Finely chopped fresh cilantro
chopped or shredded romaine lettuce
1 Tbs Herdez guacamole Salsa verde (different than the salsa verde for chicken. This is more of a dressing/sauce)
Street style corn or flour tortillas (because they are small)
lime slices for garnish
🍋🟩 Directions
💚 STEP 1: Season both sides of the chicken with cumin and squeeze lime juice onto chicken and place in bottom of Crockpot.
💚 STEP 2: Pour entire bottle of Herdez salsa verde (not the guacamole one) on top of chicken covering it in salsa completely.
💚 STEP 3: Cook for 6-8 hrs on low in Crockpot.
💚 STEP 4: Take chicken out when cooked and shred it on a cutting board. I like to use my meat shredding claws. A food processor works, too. Return chicken to Crockpot and mix with the salsa that’s in there.
💚 STEP 5: Prep the taco filling ingredients. Dice the onion, chop the cilantro, shred the lettuce unless you bought pre shredded or chopped in a bag, slice the avocado, get the guacamole salsa, and warm the tortillas on a plate for about 20 seconds.
💚 STEP 5: Assemble the tacos— shredded chicken, lettuce, onion, cilantro, and lay avocado slices on the inside. Fold tacos and stack upright next to each other so they lean against each other and stay closed. You could even put a dollop of sour cream or guacamole salsa on the inside of tortilla so that it sticks and stays closed. Taco stands would also work nicely. I just don’t have any. Drizzle maybe 1/2-1 tablespoon of the guacamole salsa on top of taco. You can add more lime juice on top if you want and serve with whatever sides you want.
