Field to Fork Pheasant

There’s nothing quite like bringing home your own dinner from the field. After a good day’s hunt, I cleaned the pheasants, hung up my vest, and started on what turned out to be one of the best meals we’ve had in a while.

I wanted something hearty and comforting, so I went with dumplings — simple and old-fashioned. Just a 2:1 mix of egg to flour, stirred together until the dough felt right. Set those aside, and it’s time to get the pheasant going.

I seasoned the breasts with a mix of salt, onion powder, garlic powder, paprika, and a touch of black pepper, then gave them a light dusting of flour. Nothing fancy, just the kind of seasoning that brings out good, honest flavor.

In a deep pan, I melted a couple tablespoons of butter until it sizzled, then browned the pheasant on both sides — about two minutes each. The smell filled the kitchen in that cozy, home-after-a-hunt kind of way. Once browned, I set the pheasant aside and tossed in another bit of butter with sliced onions. When they softened, I added mushrooms and minced garlic, and the aroma alone could make you forget how tired you are.

A sprinkle of flour went in to coat everything, then I poured in chicken broth, a squeeze of lemon, and a spoonful of Dijon mustard. It all simmered together while I stirred in cream and Parmesan, thickening into a rich, creamy sauce. That’s when the pheasant went back in to finish cooking — soaking up every bit of that goodness.

Served it all over the dumplings, sprinkled some parsley on top, and sat down to a meal that tasted like the day’s hard work — wild, fresh, and full of reward.

There’s something special about cooking what you’ve earned out in the field. A little butter, a little patience, and a whole lot of appreciation — that’s what “from field to table” is all about.
