Chicken, Rice, Corn With Zesty Avocado Lime SaucešŸ„‘

Ingredients

Chicken:

2 tbsp Olive oil

Chicken thighs

1 tsp Onion powder

1 tsp Garlic

½ tsp Cumin

2 tsp Kinder’s Margarita seasoning

Salt and pepper to taste

Rice:

1 cup rice (I used minute rice)

1 tbsp lime

Salt and pepper to taste

Sauce:

½ Avocado

1 tbsp Sour cream or Greek yogurt

1 tbsp lime juice

1 small clove of garlic

¼ tsp salt

1-2 tsp of water to thin

Directions:

-Cut chicken into bite-sized pieces (I used thighs) and season.

-On medium-high heat, add olive oil to a pan and cook chicken.

-Remove chicken and add corn; cook until heated through.

-Cook rice according to package directions (I used minute rice). Add seasoning and lime juice to the water before cooking.

-For the Sauce, add avocado, sour cream or Greek yogurt, lime juice, a pinch of salt, garlic, and water
