Roasted broccolini 😋
There’s a chill in the air here in Maryland. To me, that means roasted veggie season is upon us! Picked up this broccolini at the market, washed it, roasted it in olive oil with garlic powder, salt, pepper and red pepper chili flakes. Shredded some parmesan on top after I pulled it from the oven. #tender and #delicious 🤤
There’s nothing quite like the cozy feeling of a chill in the air, signaling the start of 'Roasted Veggie Season'! It’s my absolute favorite time to get creative in the kitchen with simple, wholesome dishes, and this oven roasted broccolini with Parmesan is always at the top of my list. I’ve refined my method over time, and I promise you, it’s foolproof for getting perfectly tender, seasoned broccolini every single time. First things first, let's talk about prepping your broccolini. I usually give it a good wash and then trim off the very ends of the stalks, as they can sometimes be a bit woody. If the stalks are particularly thick, I might even slice them lengthwise to ensure even cooking. This little trick helps them get that beautiful 'close up cooked' look, where everything is uniformly tender-crisp. Now for the seasoning – this is where the magic happens! I always make sure my broccolini is completely dry after washing; a little pat-down with a paper towel does wonders. Then, I spread it out on a baking sheet. The key to truly delicious, seasoned broccolini before roasting is a generous drizzle of good quality olive oil. You want every floret and stalk lightly coated. After that, I sprinkle on garlic powder, sea salt, black pepper, and for a little kick, a pinch of red pepper chili flakes. I toss it all together right on the baking sheet to make sure everything is evenly coated. You want to make sure your broccolini has enough space; overcrowding the pan can steam your veggies instead of roasting them, leaving them less than ideal. A single layer is crucial for that desirable slightly 'charred broccolini' finish. I roast mine in a preheated oven at around 400°F (200°C) for about 12-15 minutes, or until the stems are fork-tender and the florets are slightly crispy and golden brown. The smell alone is enough to get your taste buds tingling! Once it's out of the oven, that’s when I add the shredded Parmesan cheese. The residual heat melts it just enough to create a savory, nutty topping that really elevates the dish. Want to try some variations? A squeeze of fresh lemon juice over the top after roasting creates a vibrant 'roasted broccolini parmesan lemon' experience, adding a bright, zesty contrast to the rich Parmesan. Or, if you love spice, increase those chili flakes or add a dash of smoked paprika for a deeper flavor. This simple roasted broccolini isn't just a side dish; I love adding it to pasta, tossing it into a grain bowl, or even serving it alongside scrambled eggs for a hearty breakfast. It’s incredibly versatile and always a crowd-pleaser. Trust me, once you try this method, you'll be making it every 'Roasted Veggie Season'!
