Roasted Vegetable Soup

This is one of my favorite recipes to make during the fall and winter. It takes a while to make but the prep and clean up are both super quick so it takes very little effort. It freezes well and goes super well with warm bread for a great cozy vibe!

Common ingredients include butternut squash, carrots, and garlic, which are roasted to perfection, enhancing their natural sweetness. To prepare, it’s recommended to preheat the oven to 400°F (200°C) and roast your chopped vegetables drizzled with olive oil, rosemary, and thyme for about 40 minutes. After roasting, simply blend the mixture with water for a smooth soup. This method retains the essential nutrients, making it a healthy option. Consider adding ingredients like ginger or a splash of lemon juice for an extra flavor boost. Serve the soup warm, paired with crusty bread or a light salad for a balanced meal. Also, remember it's freezer-friendly, making it a great meal prep option! Enjoy the delightful aroma of roasted vegetables wafting through your kitchen, perfect for those chilly autumn evenings.
