Lemon Butter Garlic Pasta with Roasted Tomatoes✨

Ingredients

-Grape Tomatoes

-Sweet yellow onion

-Fresh Garlic

-Lemon

-Shrimp

-Chicken Broth (can sub for vegetable broth if pescatarian)

-Onion powder

-Garlic powder

-Tony's creole seasoning

-Parsley

-Black Pepper

-Butter

-Olive oil

-Linguine

Instructions

1. Add olive oil to pan and let heat up (medium heat). If using stainless steel pot, be sure to let the pan heat first before adding oil. Season shrimp with garlic and onion powder, Tony's creole seasoning, parsley and black pepper. Once finished cooking, remove shrimp from pot and sit to the side. Make sure to leave the juices from the shrimp in the pan!

2. After removing shrimp, use same pan and add butter. Use generate amount to coat bottom of pan. Then add cut up grape tomatoes and begin to let it simmer.

3. Add in chopped onions and garlic. You may need to add butter at this stage. Allow the mixture to start simmering and begin to reduce down. You will notice the tomatoes will begin to break down a little and the sauce will begin to slightly thicken up. When this happens, add chicken broth a little at a time. The amount of everything depends on the serving size.

Good rule of thumb is to add enough broth so that the sauce is not thick but not watery either. Very important to add broth little by little.

4. Add parsley. Keep simmering until sauce begins to look like this. If needed, you can add more broth a little at a time to get the right amount of sauce/consistency.

5. Add shrimp back into the sauce and continue to let simmer. If not already, stove at this point should be on a lower temp. Squeeze in fresh lemon juice. Start with a little, taste, and add more as needed.

6. I leave my noodles cooked separately on the side (to avoid noodles soaking up all the sauce) and just add sauce to the noodles once I'm ready to eat.

Garnish with parsley.
