You know that feeling when you have just one perfectly ripe banana sitting on your counter, too brown for a smoothie but not quite enough for a full banana bread batch? That's exactly why I love this recipe! It’s my go-to for a quick, satisfying treat without the commitment of a huge loaf. Perfect for a small household or when you just need a little something sweet. This isn't just any banana bread; it's a small-batch wonder that truly delivers! And yes, it absolutely includes an egg! That's key for getting that lovely moist, tender crumb we all adore in a good banana bread (or banana cake, as some call it!). The egg binds everything together beautifully, ensuring your bread isn't dry or crumbly. It's a non-negotiable for that classic texture. First things first, your banana needs to be really ripe – I'm talking brown spots everywhere! The browner it is, the sweeter and more 'banana-y' your bread will be. When you smash it, aim for a lumpy consistency, not a smooth puree. Those little chunks of banana caramelize beautifully during baking, adding bursts of flavor. Combining the wet ingredients like the smashed banana, egg, vanilla, and olive oil is super straightforward. I find that olive oil gives it a wonderful richness and keeps it extra moist, though melted butter works too if you prefer! Then, gently fold in your dry ingredients – flour, both sugars (brown sugar adds moisture and a lovely caramel note!), and that pinch of salt to balance the sweetness. A pro tip: don't overmix! Just combine until no streaks of flour remain; overmixing can lead to tough banana bread. Now for baking! The OCR mentioned 'Add to two mini loaf pans (or one regular loaf pan), grease lined!' – this is exactly what I do. Mini loaves are fantastic because they bake faster and are perfect for individual servings or for sharing with one other person. Make sure your pans are well-greased (I use non-stick spray or butter and a dusting of flour) to prevent sticking. I bake mine at 350°F (just like the OCR says 'Bake at 350') until a 'toothpick comes out clean' when inserted into the center. This usually takes about 25-35 minutes for mini loaves, or 45-55 minutes for a single regular loaf. Keep a close eye on it, as oven temperatures can vary! The great thing about this simple 'one banana bread recipe with egg' is how easily you can customize it for your 'Weekend Recipes'. While the original recipe mentions optional toppings like nuts or chocolate chips, I often add a sprinkle of cinnamon right into the batter for extra warmth. Sometimes, I'll fold in a few chopped walnuts for crunch or a handful of mini chocolate chips for an extra treat. You could also try a dash of nutmeg or even a few dried cranberries. It really makes it your own! Once it's out of the oven, let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. It’s hard to resist, but cooling helps it set and prevents it from getting soggy. This banana bread is amazing served warm with a cup of coffee, or even for breakfast the next day. It stays wonderfully moist for days stored in an airtight container at room temperature. Give it a try, and let me know how it goes – it's become a true favorite for me!

how long do i put it to cook for at 350?
