Bitey Honey Mustard Chicken 🍯💛

Ingredients:

• 4 chicken breasts

• Salt & garlic powder (to taste)

• 3 small sweet potatoes, peeled & diced

• 3 carrots, sliced

• Olive oil (for roasting)

• 1/4 cup grass-fed butter

• 1/4 cup Dijon mustard

• 1/4 cup raw honey

Directions:

1. Preheat oven to 350°F.

2. Toss diced sweet potatoes and carrots with olive oil and salt. Spread evenly on a baking sheet.

3. Roast for 30 minutes, until tender and lightly caramelized.

4. Meanwhile, heat a large frying pan over medium heat.

5. Season chicken breasts with salt and garlic powder.

6. Sear chicken on both sides until golden. Remove from pan, slice, then return to the pan to finish cooking.

7. Melt 1/4 cup butter directly into the pan with the chicken.

8. Add roasted sweet potatoes and carrots back into the pan.

9. In a small bowl, whisk together 1/4 cup Dijon mustard + 1/4 cup raw honey.

10. Pour sauce over everything, toss to coat, and cook 2–3 minutes until glossy and warmed through.
