@blackstone_betty turned a few simple ingredients into the ultimate Tomato Burrata Dip with blistered tomatoes, creamy burrata, Pecorino Romano, and Tuscan Herb Seasoning. 🍅🧀 Finished with fresh basil and a drizzle of balsamic glaze, it's the perfect appetizer for sharing with warm, crusty bread.

Ingredients

1 cup extra virgin olive oil

2 garlic cloves, finely grated

1 tsp crushed red pepper flakes (or to taste)

1 tsp Blackstone Tuscan Herb Seasoning

1 tsp dried parsley

1 cup freshly grated Pecorino Romano cheese

Salt and freshly cracked black pepper, to taste

1 pint baby San Marzano or cherry tomatoes

1 tbsp extra virgin olive oil

1 ball burrata cheese

Balsamic glaze, for drizzling

5 fresh basil leaves, torn

1 loaf crusty Italian bread, torn into rustic pieces

Directions

1. Preheat your Blackstone griddle to medium heat.

2. Toss the tomatoes with 1 tablespoon of olive oil and place them on the griddle. Cook for 8–10 minutes, turning occasionally, until blistered, softened, and beginning to burst.

3. While the tomatoes cook, combine the remaining olive oil, grated garlic, crushed red pepper flakes, Blackstone Tuscan Herb Seasoning, dried parsley, Pecorino Romano, salt, and black pepper in a shallow serving dish. Stir until well combined.

4. Spoon the hot blistered tomatoes over the seasoned olive oil mixture. Tear the burrata into large pieces and place it in the center of the dish.

5. Drizzle with balsamic glaze and garnish with the fresh basil.

6. Serve immediately with the torn Italian bread. Dip the bread into the seasoned oil and scoop up the burrata, blistered tomatoes, and Pecorino Romano with each bite.

... Read moreCooking with a Blackstone griddle truly elevates the flavors of simple ingredients like tomatoes and cheese. From my own experience, blistering tomatoes on the griddle intensifies their sweetness and adds a subtle smoky depth that you can't achieve with other cooking methods. Using baby San Marzano or cherry tomatoes works wonderfully due to their natural juiciness and sweetness. Incorporating pecorino Romano cheese brings a salty and tangy profile that perfectly complements the creamy burrata. When assembling the dip, I recommend freshly grating the Pecorino Romano to ensure it melts slightly with the warm tomatoes, blending all flavors seamlessly. The Blackstone Tuscan Herb Seasoning adds an aromatic touch reminiscent of Mediterranean cuisine, making the dish more vibrant. It’s important not to oversalt, as the cheese already contributes a good amount of saltiness. Adding crushed red pepper flakes introduces a pleasant heat that balances the richness of the burrata. Drizzling balsamic glaze on top is my favorite finishing touch; it adds a sweet acidity that cuts through the creaminess and makes each bite more interesting. Serving the dip with torn rustic Italian bread allows you to scoop up the delicious mix while adding a crunchy texture. For outdoor cooking enthusiasts, the Blackstone griddle is excellent for gatherings because it heats evenly and allows you to cook and serve directly from it, keeping food warm and fresh. I find this dip particularly enhances social meals, making it a perfect app to enjoy with family and friends during outdoor events or casual get-togethers.
