Ingredients:

- 1-2 TBSP of white jelly powder (depending on desired firmness, the brand I use is Chinese)
- 2 to 3 tablespoons osmanthus honey (adjust to taste)
For Butterfly Pea Tea:
- 1/3 or 1/4 cup hot water
- 2 tablespoons dried butterfly pea flowers
For the Drink:
- 1 cup sweetened Chinese coconut milk
- Ice cubes (optional, for immediate serving)
Instructions:
1. Prepare the Adjusted Osmanthus Jelly:
In a bowl, dissolve the osmanthus honey with hot water. Add the white jelly powder and stir until completely dissolved. Set aside for 10minutes. This white jelly powder doesn’t need refrigeration.
2. Make the Butterfly Pea Tea Ice:
Add the dried butterfly pea flowers in the hot water and steep for about 5-10 minutes until the water turns a deep blue. Let it cool!
3. Assemble the Drink:
Place a generous amount of osmanthus jelly cubes in a serving glass.
Add ice cubes.
Pour the sweetened Chinese coconut milk over the ice.
Slowly pour the Butterfly pea tea.
