It got me thinking about all the little things that make a home-cooked meal truly special, especially when it involves a perfectly seared steak alongside crisp steamed broccoli and those dreamy garlic mashed potatoes. First off, let’s talk about the star: the steak! Choosing the right cut makes all the difference. While my partner is a pro at this, I've learned a few tricks. Look for good marbling – those little flecks of fat melt beautifully and keep your steak juicy. Ribeye, New York strip, or even a good sirloin are fantastic choices for pan-searing. Before it even touches the pan, make sure your steak is at room temperature for about 30 minutes. This helps it cook more evenly. Now, for that irresistible tasty crust! This is where the magic happens. Pat your steak really dry with paper towels. Season generously with salt and pepper, or your favorite steak rub. Get your pan (cast iron is my go-to!) screaming hot with a high smoke point oil like avocado or grapeseed. Sear for 2-3 minutes per side without moving it, letting that crust develop. Then, if you want to get fancy, add a knob of butter, garlic cloves, and fresh herbs like rosemary or thyme to the pan and baste the steak as it finishes cooking. The smell alone is divine! For doneness, a meat thermometer is your best friend – 130-135°F for medium-rare, 135-140°F for medium. Always let your steak rest for 5-10 minutes after cooking; this keeps all those delicious juices locked in. And what’s a beautiful steak without its trusty companions? For the steamed broccoli, I aim for vibrant green and tender-crisp, never mushy! A simple steaming basket over boiling water works wonders. Don't overcrowd it, and steam for just 3-5 minutes. Once it’s done, a quick toss with a squeeze of fresh lemon juice, a drizzle of olive oil, and a sprinkle of flaky sea salt elevates it from just 'a side' to a 'wow' side. Sometimes, I’ll even add a pinch of red pepper flakes for a little kick! Finally, for those creamy garlic mashed potatoes, they're surprisingly easy to whip up. Boil your favorite potatoes (Yukon Golds are amazing for mashing) until fork-tender. Drain them well, then mash with warm milk or cream, a generous amount of butter, and of course, plenty of roasted or sautéed garlic. Season with salt and pepper to taste.
