Dough:

1 1/2 cups all-purpose flour

1 tsp baking powder

1/2 cup powder sugar

1/3 cup granulated sugar

1/2 tsp salt

1 tsp vanilla extract

1/3 cup vegetable oil

1/2 cup milk

1 tbsp lemon juice

1 egg

1 lemon (zest)

1 1/2 cups blueberries

Glaze:

2 tbsp butter (melted)

1 tbsp lemon juice

1 cup powder sugar

1/2 tsp vanilla extract

Directions:

1. Preheat oven to 350 F. Lightly grease a 9x5-inch loaf pan.

2. In a large mixing bowl, combine the dry ingredients (flour, baking powder, sugar, and salt). Whisk together until evenly distributed and set aside.

3. In a medium mixing bowl, whisk well to combine the wet ingredients (milk, oil, egg, vanilla extract, lemon juice, and lemon zest).

4. Pour the wet ingredients into the dry ingredients and mix together using a rubber spatula until just combined and no dry ingredients are visible. Do not overmix (overmixing will make the bread denser and firmer). Fold in 1 cup of blueberries until evenly mixed.

5. Pour the batter into the prepared loaf pan and add the remaining ½ cup blueberry on top. Bake for 50-55 minutes.

6. While the bread is baking, mix together the glaze ingredients in a small bowl and set aside. Once the bread is taken out of the oven let it cool for 5-10 minutes, then spread glaze on top.
