1c warm (107t) water

1tb (10g) active dry yeast

2 tb (12 g) sugar

Sit for 15 minutes

Separate bowl -

3.5 cups (420g) AP flour

2 tsp (11g) salt

2 tb (12 g) sugar

Stir

Separate bowl -

1 whole egg

1 egg yolk

Whisk and add to flour

Stream in yeast mixture on low speed

1/4 c (half stick) unsalted butter cubed and softened

Kneed 10 minutes (low speed)

Grease bowl

Proof in oven with light on 1-1.5 hours

Punch down

Flour work surface and divide into 10 equal buns

Proof again 45-60 minutes

Brush with egg wash Sesame seeds on top

Bake at 375 for 12-14 minutes

Once baked and cooled, grab your heart shaped cookie cutter and cut through the bread make sure you’re pressing down firmly, but not squishing the entire bread
