Slice 2lbs of gold potatoes into 1/16th in thin slices
Mix together: 1/2 stick of melted butter, 5 (or 9) garlic cloves, thyme, rosemary, salt/pepper
Add in your potato slices
Grate 1 cup of gruyer cheese and 1/2 cup of Parmesan
Layer your potato slices into a muffin tin, alternating between a few layers of potato and a layer of cheese! Try and get at least 3-4 layers of cheese in there for maximum cheesiness
Cover with foil and bake for 25min or until soft all the way through
Uncover and increase oven temp to 425°
Bake until brown and crispy
Serve with extra thyme and sea salt
