Using Bob's Red Mill 1-to-1 Gluten Free Baking Flour is a reliable choice because it mimics the texture and flavor of regular flour, providing a tender crumb and great rise. When making banana bread, the riper your bananas, the better the natural sweetness and flavor. Overripe bananas with brown spots are ideal—they add moisture and richness without extra sugar. Adding a tablespoon of olive or avocado oil, as suggested in the recipe, really enhances the bread's moistness and gives it a softer texture that lasts longer. For those new to gluten free baking, gently folding the ingredients rather than vigorously mixing can help keep the bread light. Also, using baking soda as a leavening agent reacts well with the acidity in bananas, ensuring a good rise. From personal experience, this gluten free banana bread freezes well when sliced, making it easy to enjoy later. Toasting a slice in the morning with a bit of butter or almond butter makes a perfect quick breakfast. Additionally, you can customize this recipe by stirring in chopped nuts, dairy-free chocolate chips, or cinnamon for extra flavor. This recipe’s simplicity combined with its wholesome ingredients makes it a staple in many gluten free households.
