... Read moreAs someone who loves hearty meals especially during the cooler months, I’ve found that this gluten-free chili mac recipe is a must-have for any fall dinner rotation. The use of Rummo’s gluten-free elbow macaroni ensures a great texture that complements the savory chili base without any gluten worries. Incorporating spices like paprika, cumin, and cayenne pepper creates a perfect balance of warmth and mild heat, which hits the spot on chilly days. One tip I’ve discovered is to let the chili simmer a bit longer than 30 minutes if time allows. This extra simmering deepens the flavors, allowing the spices and ingredients to meld beautifully. Adding blended cottage cheese instead of just shredded cheese gives this dish a creamy richness without overpowering the flavors. I appreciate the versatility here—using raw cheddar versus Velveeta lets you customize the cheese factor based on your mood. I also substitute ground turkey occasionally for a leaner version that’s just as flavorful. Including kidney beans adds fiber and makes the dish more filling, which is especially comforting after a long day. Pairing this gluten-free chili mac with a fresh autumn salad or steamed vegetables rounds out the meal nicely. This recipe is more than just a dinner idea; it’s an easy way to bring warmth and comfort to your table while adhering to gluten-free dietary needs. For anyone exploring gluten-free options, this chili mac offers a delicious and satisfying alternative. Give it a try on your next cozy night in—you won’t be disappointed!
