Spicy Salmon Crispy Rice Balls

Spicy salmon crispy rice balls — I have been on a huge kick of grabbing Onigiri as a snack, and this inspired me to try a twist on a rice ball at home! 🍙

Ingredients:

Sushi Rice:

— 2 cups sushi rice

— 2 1/4 cups water

— 1/4 cup rice vinegar

— 4 tsps sugar

— 1 tsp salt

Salmon:

— 1 large salmon fillet, cooked (or canned salmon)

— 2 tbs mayo

— 2 tbs sriracha

— 1 tbs soy sauce or coconut aminos

Glaze:

— 2 tbs soy sauce

— 2 tbs maple syrup

— 1 tbs sesame oil

How-to:

1. Start with your sushi rice. Add rice and water to a large pot over medium high heat. Cook until it’s just starting to simmer, lower the heat to medium low, and cook for 15-17 more minutes.

2. While the rice is cooking, heat sugar and salt in vinegar until it just starts to simmer and the sugar dissolves.

3. When the rice is done, gently fold in the vinegar mixture.

4. Set the rice aside, and combine the salmon with the mayo, sriracha, and soy using a fork to make a mixture.

5. Use your hands to roll the rice into balls, with about a tablespoon of salmon filling — plastic wrap definitely helps! You want them tightly pressed, or they’ll fall apart when frying.

6. Heat a generous drizzle of oil over medium heat. Cook the ball on one side until the bottom becomes golden and crispy, flip, and repeat. Just before removing from the ball, drizzle with the glaze and let sit a few more seconds.

7. Option to serve with crispy seaweed.
