Butternut Squash Feta Pasta

The viral fetal pasta but make it fall! 🍂

Butternut squash feta pasta recipe:

Add about 4 cups diced butternut squash, a block of feta, 2 shallots to an oven-safe dish. Top with a generous splash of olive oil, salt, pepper, and thyme.

Roast for 45-50 minutes at 400˚ until the butternut squash is soft when poked with a fork.

Let it cool slightly, and then blend until smooth. To reach the desired thickness, add in 1-2 cups pasta water or chicken broth.

Toss pasta with the sauce, and (optional) add in some bacon & spinach!
