Chewy, cozy, and just a little gooey — basically pumpkin season meets campfire season 🍂🔥
Recipe:
½ cup melted butter
¼ cup brown sugar + ½ cup white sugar
1 tsp vanilla
6 tbsp pumpkin purée (blot it first — spread pumpkin on paper towels and gently press to soak up excess moisture so your cookies stay chewy, not cakey)
1½ cups flour
¼ tsp salt
¼ tsp baking powder
¼ tsp baking soda
2 tsp pumpkin pie spice
⅓ cup chocolate chunks
⅓ cup mini marshmallows
⅓ cup crushed graham crackers
Steps:
1️⃣ Whisk together the butter + sugars until smooth.
2️⃣ Add in vanilla and blotted pumpkin purée.
3️⃣ In a separate bowl, whisk flour, salt, baking powder, baking soda, and pumpkin pie spice.
4️⃣ Combine the wet + dry ingredients, then fold in chocolate chunks, marshmallows, and graham crackers.
5️⃣ Chill the dough for at least 30 minutes (this keeps them chewy, not cakey).
6️⃣ Scoop about 1½ tbsp of dough per cookie, flatten slightly, and press a few extra chocolate chunks, marshmallows, or graham pieces on top for that bakery-style look.
7️⃣ Bake at 350°F for 11–12 minutes.
8️⃣ Let them cool on the tray for 10 minutes — the marshmallows will stay soft and gooey.

If you're a fan of fall flavors and want to elevate your cookie game, pumpkin s’mores cookies offer the perfect blend of cozy autumn spices and classic campfire treats. The use of pumpkin purée not only adds moisture but brings a subtle earthiness complemented by the warm pumpkin pie spice included in the recipe. One crucial tip when using pumpkin purée is to blot it gently on paper towels to remove excess moisture; this technique ensures your cookies turn out chewy rather than cakey. Incorporating chocolate chunks, mini marshmallows, and crushed graham crackers creates a delightful texture contrast reminiscent of traditional s’mores but with a seasonal twist. Chilling the dough before baking is essential to maintain the cookies' chewy texture—don’t skip this step! For baking enthusiasts looking to customize, consider experimenting by adding a pinch of cinnamon or nutmeg to the pumpkin pie spice mix, or using dark chocolate chunks for a richer flavor. The recipe works wonderfully for fall gatherings or as a comforting treat alongside a warm cup of coffee or spiced latte. Baking pumpkin s’mores cookies at home is also a fun activity for families or friends, as the gooey marshmallows and chocolate make these cookies irresistibly indulgent. Once baked, let them cool on the tray so the marshmallows stay soft and gooey, enhancing that fresh-from-the-oven experience. This cookie recipe beautifully bridges the best of fall’s flavor palette and the nostalgic joy of campfire s’mores, making it a must-try addition to your seasonal baking repertoire.
