Calling all pickley/vingerary/tangy people… ☎️ Not a pickle recipe but a marinated cucumber recipe! My aunt makes these every summer and we inhale them!! They are one of my favorite picnic/cookout foods paired with hot dogs, baked beans, cheesey potatoes, and Mac salad. They add the best crunch and tang :)

Ingredients:

4 english cucumbers sliced THIN, use a mandolin if possible!

1 1/2 Cups Apple Cider Vinegat

1 Cup and 2 Tablespoons Sugar

1 and 1/2 Tablespoons Salt

combine the brine ingredients and stir well. pour over the cucumbers and push them down so they are fully submerged. refrigerate overnight then enjoy! so easy, so cheap and so delicious!

*dont add or eliminate seasonings, i promise they are perfect as is!

*if the cucumbers arent sliced thin they wont be as good, invest in a mandolin!!

*must sit over night for the flavors to come together and dissolve the sugar and salt

... Read moreWhen summer rolls around, there’s one dish my family always requests, and it’s these incredible marinated cucumbers. They’re not your traditional fermented pickles, but rather a quick, vibrant side dish that brings a burst of tangy freshness to any meal. I first tasted something similar at a backyard BBQ years ago, and I swore I’d recreate that magic – and I think I've finally nailed it! The secret to these amazing marinated English cucumbers truly lies in the slicing. Many of the best recipes call for them to be super thin, almost translucent. This isn't just for aesthetics; it allows the cucumbers to fully absorb the flavorful brine, ensuring every bite is packed with that delightful sweet-sour-salty punch. If you have a mandolin, now is its time to shine! Using a mandolin ensures consistent, paper-thin slices, which is crucial for the texture. Trust me, investing in one is worth it for this recipe alone. If you don't have one, a very sharp knife and a steady hand can work, but it will take a bit more effort to get those perfect thin cucumber rounds. The images of "thinly sliced English cucumbers" and the mandolin make it clear how important this step is. Now, let's talk about the star of the show: the brine. My recipe uses a simple yet potent mixture of apple cider vinegar, sugar, and salt. The apple cider vinegar provides a distinct fruity tang that you won't get from white vinegar, complementing the crispness of the cucumbers beautifully. It's essential to stir the brine ingredients well in a metal mixing bowl until the sugar and salt are completely dissolved before pouring it over your thinly sliced cucumbers. Make sure all those wonderful cucumber slices are fully submerged in the brine; you might need to gently press them down. Then, the waiting game begins – refrigerate them overnight. This allows all those flavors to meld and the cucumbers to become perfectly tender-crisp. This overnight marination is key for that irresistible flavor profile, making it a perfect spring picnic recipe. While the basic recipe is fantastic as is, there's always room to play and personalize! If you're someone who loves the classic taste of dill, you can easily transform these into a delicious version of 'dill cucumbers.' Simply add a generous handful of fresh chopped dill to your brine mixture. It adds an earthy, aromatic note that is incredibly refreshing. I’ve also experimented with adding a few sprigs of fresh mint or parsley for a different twist. For those who enjoy a little heat, a pinch of red pepper flakes can provide a gentle warmth. Thinly sliced red onion also pairs wonderfully, adding another layer of texture and flavor to the mix. These marinated English cucumbers are incredibly versatile. They make an ideal picnic side dish, perfect alongside grilled hot dogs, baked beans, or even a hearty pulled pork sandwich, as suggested in the original article. I also love them with grilled chicken or fish, or as a refreshing contrast to richer, creamy dishes. They’re a fantastic palette cleanser and a light, hydrating snack on their own. They typically last well in the fridge for about 3-5 days, but honestly, they’re usually devoured long before that! Just make sure to use firm, fresh English cucumbers right from the start for the best crunchy texture.
