And let me tell you, this creamy cheesy chicken and broccoli orzo is an absolute winner in our house! It’s one of those meals with orzo pasta that feels incredibly indulgent but is surprisingly simple to pull together for a weeknight dinner with broccoli. First off, let's talk about the orzo itself. Many people think of orzo as pasta like rice, and that's a great way to describe its texture. It cooks up quickly and really soaks up all the flavors. For this recipe, I always cook my orzo with chicken broth – it adds such a depth of flavor right from the start, making every bite of this savory lunch or dinner incredibly rich. Don't overcook it; al dente is key for that perfect bite! The heart of this dish is definitely that luscious, creamy yellow cheese sauce. Using Velveeta orzo style is genius for achieving that super smooth, velvety texture. I usually combine the Velveeta with milk and stir it constantly over low heat until it's completely melted and glossy. Sometimes, for an extra cheesy kick, I'll even add a bit of cream cheese or a mix of white cheddar to my shredded cheddar cheese topping. Don't be shy with the seasonings – that pepper, garlic powder, and onion powder are essential to elevate the flavor beyond just cheese. For the cubed chicken, I like to pan-sear it until it's golden brown and cooked through before cubing. This locks in the moisture and adds a nice texture contrast. And the bright green broccoli florets are a non-negotiable for me – they add freshness and a pop of color, not to mention a healthy dose of veggies to this chicken orzo dish. I steam them lightly so they retain a slight crunch and don't get mushy when mixed in. What I love most about this creamy chicken broccoli orzo bake is how versatile it is. While it's a fantastic stand-alone meal, you could easily pair it with a crisp green salad or some warm garlic bread. It’s hearty enough to be a main course, but also comforting enough that it could complement something like a simple grilled chicken breast if you wanted to serve it as a hearty side, making it a contender for chicken with orzo recipes that impress. It re-heats wonderfully for a savory lunch the next day, too! If you're looking for chicken with orzo recipes that are sure to be a hit with everyone, this cheesy chicken and broccoli orzo is a must-try. It's truly a dish that brings smiles to the dinner table.
