Canning Beets
Canning beets is an excellent way to preserve one of the healthiest root vegetables for long-term storage, allowing you to enjoy their earthy flavor and nutritional benefits year-round. When planning to can beets, it's critical to understand that beets are a low-acid vegetable, which means they require pressure canning rather than water bath canning to prevent the risk of harmful bacteria growth, such as botulism. Before starting the canning process, select fresh, firm beets that are free from bruises or blemishes. Wash them thoroughly under running water to remove any dirt. Typically, smaller beets are better suited for canning as they cook evenly and fit easily into jars. You can can beets either whole, sliced, or diced. Pre-cooking (boiling or steaming) the beets until they are just tender but not overcooked is recommended to preserve texture and flavor. After cooking, peel the skins off, which usually slip away easily with gentle rubbing. Sterilize your canning jars and lids by boiling them or running them through a dishwasher cycle to ensure safety. Fill the jars with prepared beets, leaving about 1-inch headspace, which allows for expansion during processing. Add boiling water, leaving the same headspace, and remove air bubbles by gently tapping the jars or running a non-metallic spatula along the sides. Seal the jars with lids and rings, then process them in a pressure canner at 10-15 pounds of pressure (adjusted for altitude) for the recommended time, which generally is about 30 minutes for pint jars and slightly longer for quarts. After processing, let the jars cool undisturbed for 12-24 hours. Check seals by pressing the lid center; it should not flex up and down. Properly sealed jars can be stored in a cool, dark place for up to a year. Remember, safe canning is crucial to preserve not only flavor but also to prevent foodborne illnesses. Always follow a reliable, tested canning recipe and adjust pressure or time based on altitude and jar size.
