Tiramisu cookies for Valentine’s Day 💕

Tiramisu means “pick me up”,and honestly, that’s exactly what love (and dessert) should do ☕🍪

Instead of the classic cake, I turned it into tiramisu cookies this time. Soft, coffee-kissed, a little cocoa on top… cozy, sweet, and perfect for Valentine’s Day baking.

Cookie Dough:

butter 170g

sugar 100g

brown sugar 73g

vanilla 4g

salt 3g

espresso powder 6g

egg 68g

flour 270g

baking soda 5g

Mascarpone Cream:

cream cheese 180g

icing sugar 120g

vanilla 4g

cream 240g

espresso powder 2g

Topping:

cocoa powder

Cookies:

Beat butter, granulated sugar, brown sugar, vanilla, salt, and espresso powder until creamy.

Add egg, mix until smooth.

Add flour and baking soda, mix on low just until combined.

Scoop about 2 Tbsp dough per cookie onto baking pan.

Bake at 180°C/350°F for 10–12 min until edges are lightly golden and centers look soft.

Mascarpone cream:

Beat heavy cream, espresso powder, vanilla, and powdered sugar to stiff peaks.

Fold in room-temp mascarpone until smooth.

Assembly Pipe cream onto cooled cookies, dust with cocoa powder.
