So simple, so good, and healthy

Set oven to 350

Chop up half a yellow onion. Rough chop is fine

Chop 6 garlic cloves

My neighbor gives me his tomatoes from his garden. I used probably 12

Roughly chop parsley

Salt, don’t be afraid of it. It brings out the tomato flavor

Pepper

Some Calabrian pepper flakes, to taste

Drizzle in extra virgin olive oil

Bake until blistered. I did about an hour

Blend. Pour in sauce pan. Add brown sugar if desired a little sweeter.

This made 3.5 jars and tonight’s dinner
