Chickpea Curry 😋
Y’all this came out SO good. Even though it seems like a lot of ingredients, I promise this is a super easy recipe!!
You may notice there are a lot of onions on my cutting board lol that is because I doubled the recipe so what I actually used is listed below ⬇️⬇️⬇️
✨Ingredients (in the order that I used them)
3-4 tbsp of coconut oil
2 medium onions (diced)
2 cans of tomatoes (diced)
2 medium carrots
2 small red potatoes
2 cans of Chickpeas (drained & rinsed)
7(ish) garlic cloves
3 tbsp Garam Masala (DON’T SKIP THIS)
2 tsp curry powder
1/2 tsp cumin
2 cans of coconut milk (can is better for consistency)
Juice of 1/4 lime 🍋🟩
I added a LITTLE cornstarch to thicken the curry.
