Pulled Chicken BBQ

I had to do it up! Though I love my Carolina Pulled Pork BBQ, at 51(52 July 21st), I have to change my diet to include decreasing my pork intake. Therefore, I had to do Pulled Chicken BBQ instead! You really can't tell the difference. Yes, I did my fresh Cole Slaw and Cole Slaw dressing to top the sandwich off! #pulledchickenbbq #homemadecoleslawanddressing

When I first tried making pulled chicken BBQ, I was pleasantly surprised at how juicy and flavor-packed the chicken remained, especially when slow-cooked with a blend of spices and BBQ sauce. One tip I found invaluable is using bone-in chicken thighs, which offer more flavor and tenderness compared to breast meat. After slow cooking, shredding the chicken with forks results in that classic pulled texture, perfect for sandwiches. Pairing the pulled chicken with a fresh homemade cole slaw adds a delightful crunch and tang that complements the BBQ flavors. Making your own cole slaw dressing—using ingredients like mayonnaise, apple cider vinegar, a touch of sugar, and mustard—really elevates the dish. This meal not only tastes great but is also lighter than traditional pulled pork, making it a suitable choice for those looking to reduce pork without sacrificing BBQ enjoyment. It's also a crowd-pleaser at gatherings and easy to customize with your favorite BBQ sauce or spice rubs. If you’re adjusting your diet like me, trying pulled chicken BBQ with homemade cole slaw is an excellent way to enjoy classic BBQ flavors in a healthier, satisfying way.
