I always find that marinating the pork chops overnight intensifies the flavor and helps keep the meat juicy during frying. Using thin cut chops cooks faster, but for thicker pork chops, I recommend adjusting frying time and always checking for an internal temperature of 145°F to ensure they are safe to eat. Seasoning the flour dredge with the same spices used in the marinade creates a harmonious flavor throughout the dish. For extra crispiness, some cooks like to double dredge their pork chops by dipping them back into the buttermilk after the first flour coating and then flouring again. This step creates a thicker, crunchier crust that can be especially satisfying. Choosing the right oil for frying is also important. Oils with high smoke points like vegetable, canola, or peanut oil keep the frying temperature steady and help achieve a golden, crispy finish. Heating the oil to 400°F before frying allows for a quick seal on the pork chops, keeping the juices inside. After frying, resting the chops on a wire rack rather than paper towels helps prevent sogginess by allowing excess oil to drain without the chops sitting directly in it. This simple tip improves texture and taste. In my experience, serving fried pork chops with Southern sides like creamy mashed potatoes, collard greens, or cornbread elevates the meal and brings out classic comfort food vibes. This recipe is not only straightforward but also customizable with your favorite seasonings, making it perfect for family dinners or casual gatherings.
