RECIPE: Apple Cheesecake Blondies Blondie: 115 g melted butter (½ cup) 150 g brown sugar (3/4cup) 50g white sugar (1/4cup) 1 large egg 1 large egg yolk 1 tsp vanilla extract 150 g all purpose flour (1 1/4 cup) ¼ tsp baking powder ½ tsp salt Apples: 2 medium apples chopped Cheesecake layer: 1 block (225g) cream cheese @Philly Cream Cheese ) 50g (1/4c) granulated sugar 1 egg yolk Whisk the butter and the sugars. Then add the egg, egg yolk and vanilla, whisk well. Then fold in the flour, baking powder, and salt. Toss the chopped apples then fold into the blondie batter. Add 3/4 of the batter to a lined 8x8 pan For the cheesecake layer, mix the soft cream cheese with the sugar then add in the egg yolk. Mix well. Top with remaining blondie batter and swirl. Bake in a preheated oven at 180C (350°F) for 25-30 minutes
