Blueberry crumble sourdough discard muffins🫐✨🥖🤍

Crumble topping:

1/2 cup granulated sugar

1/2 cup flour

8 tbsp melted butter

Mix ingredients until crumbled, large and small pieces. Don’t over mix. Set aside.

Dry ingredients:

2 cups flour

1 cup sugar

1/2 teaspoon salt

2 teaspoons baking powder

1/2 teaspoon baking soda

1 teaspoon cinnamon

Wet ingredients

8 tablespoons butter melted

2 large eggs

1/2 cup sourdough starter discard*

1 teaspoon vanilla

1 cup blueberries (I added more, just preference)

Preheat oven to 425. Combine wet ingredients in one mixing bowl.

Combine dry ingredients in separate bowl.

Slowly stir in dry ingredients with wet. Set in fridge for 1 1/2-2 hours.

Pour in muffin pan with liners, either regular or use parchment paper and cut into squares.

Place crumble on top of muffins and lightly press it down.

Bake muffins at 425 for 5 minutes.

Then switch oven heat to 350 and continue to bake for 13-15 minutes.
