Home made African meat pies

... Read moreGood morning, everyone! There's nothing quite like the comforting aroma of freshly baked, homemade African meat pies filling your kitchen. For years, I've been perfecting my recipe, and today, I'm thrilled to open up my kitchen and share my secrets with you! If you've been dreaming of making these savory delights, whether you're looking for a classic Nigerian style or just a general African pastry, you've come to the right place. This isn't just any recipe; it's a taste of tradition, made simple for your home. Making truly delicious homemade meat pies starts with two things: a flaky, tender pastry and a rich, well-seasoned filling. Many people search for specific variations like 'how to make meat pie in Nigeria,' and while this recipe provides a fantastic base, I'll also share tips to customize it, perhaps by adding those beloved diced carrots and potatoes often found in Nigerian versions. Ingredients You'll Need: For the Pastry: 3 cups all-purpose flour 1/2 teaspoon salt 1 cup (2 sticks) cold unsalted butter or margarine, cut into cubes 1 large egg, lightly beaten 1/2 cup ice-cold water (you might need a little more or less) For the Filling: 1 tablespoon vegetable oil 1 pound ground beef (or chicken/turkey for a lighter option) 1 medium onion, finely chopped 2 cloves garlic, minced 1/2 cup beef broth or water 1/4 cup all-purpose flour (for thickening) 1 teaspoon curry powder 1/2 teaspoon dried thyme Salt and black pepper to taste *Optional:* 1/2 cup diced potatoes and carrots (for a Nigerian style filling) For Egg Wash: 1 egg, beaten with 1 tablespoon water Let's Get Baking! Step 1: Prepare the Pastry Dough In a large bowl, combine the flour and salt. Add the cold butter cubes and, using your fingertips or a pastry blender, rub the butter into the flour until it resembles coarse crumbs with some pea-sized pieces of butter remaining. Now, add the beaten egg and gradually pour in the ice-cold water, mixing until the dough just comes together. Be careful not to overmix! Gently gather the dough into a ball, flatten it slightly into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes. This chilling step is crucial for a flaky crust. Step 2: Make the Savory Filling Heat the vegetable oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 3-5 minutes. Stir in the minced garlic and cook for another minute until fragrant. Add the ground beef and cook, breaking it up with a spoon, until it's browned. Drain any excess fat. Now, sprinkle the flour over the meat mixture and stir well for about 2 minutes to cook out the raw flour taste. Pour in the beef broth, stirring continuously until the mixture thickens. Add the curry powder, dried thyme, salt, and pepper. If you're going for that authentic Nigerian meat pie feel, now is the time to add your diced potatoes and carrots. Simmer gently until the vegetables are tender and the sauce has thickened. Taste and adjust seasonings as needed. Remove from heat and allow the filling to cool completely before assembling the pies – this prevents soggy bottoms! Step 3: Assemble Your Meat Pies Preheat your oven to 375°F (190°C). Lightly flour a clean surface. Divide your chilled dough into 10-12 equal pieces. Roll out each piece into a circle, about 5-6 inches in diameter. Place a spoonful (about 2-3 tablespoons) of the cooled meat filling onto one half of each dough circle, leaving a border around the edge. Fold the other half of the dough over the filling to create a semi-circle. Press the edges firmly together to seal, then use a fork to crimp the edges for a decorative finish and extra seal. Repeat with the remaining dough and filling. Step 4: Bake to Golden Perfection! Place the assembled meat pies on a baking sheet lined with parchment paper. Brush the tops of the pies with the egg wash for that beautiful golden sheen. You can also make a small slit or two on top of each pie to allow steam to escape. Bake for 20-25 minutes, or until the pies are golden brown and cooked through. Let them cool slightly on a wire rack before serving. These homemade African meat pies are perfect for a snack, a light lunch, or even as an appetizer. They freeze wonderfully too, so don't hesitate to make a big batch! Enjoy the delicious taste of homemade goodness!
