Meat Loaf/MashPotatoes and Gravy with Green Beans

Ingredient:

For the meatloaf

1 1/2 pounds (680 g) ground beef

1 small onion, finely chopped

1/2 cup breadcrumbs

1/4 cup milk

1/4 cup ketchup

1 large egg

2 cloves garlic, minced

1 teaspoon Worcestershire sauce

1 teaspoon dried oregano or Italian seasoning

1 teaspoon salt

1/2 teaspoon black pepper

For the glaze

1/3 cup ketchup

2 tablespoons brown sugar

1 teaspoon Worcestershire sauce

For the mashed potatoes

3–4 medium potatoes, peeled and cubed

3 tablespoons butter

1/4–1/3 cup warm milk

Salt and black pepper, to taste

For the vegetables

1 1/2 cups mixed vegetables (green beans, carrots, broccoli florets)

1 tablespoon butter or olive oil

Salt and black pepper, to taste

Instructions

Heat the oven to 350°F (180°C).

In a large bowl, combine the ground beef, chopped onion, breadcrumbs, milk, ketchup, egg, garlic, Worcestershire sauce, oregano, salt, and pepper.

Mix gently with your hands or a spoon until everything is evenly combined, without over‑mixing.

Line a loaf pan with parchment or lightly grease it.

Press the meat mixture into the pan and smooth the top.

In a small bowl, whisk together the ketchup, brown sugar, and Worcestershire sauce, then spread half of the glaze over the top of the loaf.

Bake for about 45 minutes.

Remove the meatloaf from the oven, spread the remaining glaze over the top, and return to the oven.

Bake another 15–20 minutes, or until the center is cooked through and the internal temperature reaches 160°F (71°C).

Let the meatloaf rest 10 minutes before slicing so it holds together.

Make the mashed potatoes

While the meatloaf bakes, cook the potatoes in salted boiling water until very tender, 15–20 minutes.

Drain well, then mash with butter and warm milk until smooth and fluffy.

Season with salt and black pepper to taste, and keep warm.

Cook the vegetables

Steam or boil the mixed vegetables just until crisp‑tender.

Drain, then toss with butter or olive oil, salt, and pepper.

Slice the meatloaf and arrange two slices on each plate.

Add a scoop of creamy mashed potatoes and a portion of mixed vegetables.

Spoon a little extra glaze or pan juices over the meatloaf and potatoes, then serve hot.

... Read moreMeatloaf is a timeless comfort food beloved in many households, offering a hearty and satisfying meal that pairs wonderfully with creamy mashed potatoes and fresh vegetables. One great tip to enhance your meatloaf is to avoid over-mixing the meat and seasonings, which helps keep the texture tender and moist. Incorporating ingredients like Worcestershire sauce and oregano, as described in the recipe, adds depth of flavor that elevates the dish. For the mashed potatoes, using a starchy variety like Russet or Yukon Gold potatoes ensures they become fluffy and smooth when mashed. Heating the milk before adding it to the potatoes helps them absorb moisture better, creating a creamier texture. Butter adds richness, while seasoning with salt and pepper rounds out the flavors. The choice of mixed vegetables like green beans, carrots, and broccoli offers a colorful, nutritious side that balances the richness of the meatloaf and potatoes. Steaming or boiling the vegetables just until crisp-tender helps preserve their vibrant color and nutritional value. Tossing them with butter or olive oil gives a silky finish and enhances the taste. To make this meal even more special, consider preparing the glaze with brown sugar and Worcestershire sauce, which creates a perfect sweet-savory topping that caramelizes as it bakes. Applying the glaze twice during the cooking process builds layers of flavor and keeps the meatloaf moist. This classic combination is ideal for comforting family dinners and can be easily doubled to serve guests or meal prep for the week. Pair with a simple side salad or crusty bread to complete the meal. Enjoy the satisfaction of a homemade, nutritious dinner that everyone will love!
