Instructions

1. Cook the pasta:

Cook rotini according to package directions until al dente. Drain and set aside. Reserve about ½ cup of pasta water.

2. Season and cook the chicken:

Season chicken with 1 tsp Italian seasoning, oregano, garlic powder, smoked paprika, salt, and pepper. Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat. Add chicken and cook until golden brown and cooked through, about 6–8 minutes. Remove and set aside.

3. Start the sauce:

Reduce heat to medium and add the remaining 2 tbsp butter. Add diced onion and cook for 2–3 minutes until softened. Add garlic and cook for about 30 seconds.

4. Thicken it:

Sprinkle flour over the onions and garlic. Stir constantly for about 1 minute. Slowly whisk in chicken broth until smooth.

5. Make it creamy:

Stir in heavy cream and milk. Add the softened cream cheese and remaining 1½ tsp Italian seasoning. Simmer gently for 3–5 minutes, stirring frequently, until the sauce begins to thicken.

6. Add ALL the cheese:

Reduce heat to low. Stir in mozzarella, Parmesan, provolone, and cheddar a little at a time until melted and completely smooth.

7. Bring it together:

Add the cooked rotini and chicken to the sauce. Toss until everything is coated. If the sauce is too thick, add a splash of reserved pasta water until you reach your favorite creamy consistency.

8. Serve:

Top with extra Parmesan and fresh parsley. Serve hot and enjoy!
