Thinly slice the onions and add them to a pan with oil, let them caramelize a little and add your mushrooms (season to your liking) then set aside. Add your pork chops in (you can cut them up before or have them whole) and cook until ready.

For your mash potatoes, boil the potatoes (make sure they are cut into 4s & salt the water) while you do the first step, once they are fork tender drain the water out. You can use a masher or a the bottom of a cup if you don’t have fancy equipment to mash them, add some butter while you mash them, along with a splash of milk. Season to your liking ( I do salt, pepper, garlic powder & paprika). Keep mashing or mixing until a smooth consistency or whatever you want it to be.

Lastly boil some salted water and add your elbow pasta in, for about 7-8 minutes they should be ready and drain. Rinse under cold water if you’d like (helps kinda cool off when you add mayo). Add half a tub of mayo (small jars), and have your ham, celery and jalapeños cut into small bites. Add them into your pasta with the mayo and mix all together, drain the water from your corn (if it’s canned) and add it in, mix everything well and leave in the fridge until serving or eat right away!

... Read moreEver have those nights where you just crave a hearty, comforting meal that feels like a warm hug? That's exactly how I feel about my go-to dinner featuring juicy pork chops, fluffy mashed potatoes, and a surprisingly refreshing macaroni salad. It’s a complete plate that hits all the right notes, and I’ve picked up a few extra tricks to make it even more special. For those golden-brown pork chops with caramelized onions and mushrooms, the secret really is in the slow caramelization. Don't rush those onions – letting them get beautifully sweet and tender adds an incredible depth of flavor. I usually season my pork chops generously with a mix of salt, pepper, and a touch of paprika before searing them. This ensures they develop that lovely crust you see in the pictures. Adding the mushrooms and onions to simmer with the chops for a bit at the end makes them truly 'smothered' in deliciousness, a far cry from dry, bland pork! Now, let's talk about the creamy mashed potatoes. While the recipe gives you the basics, I've found that using Yukon Gold potatoes makes a world of difference for that truly buttery texture. And when it comes to mashing, don't be shy with the butter! Adding it while the potatoes are still hot helps it melt right in, creating an irresistible creaminess. Beyond salt, pepper, garlic powder, and paprika (my favorites!), a splash of warm milk or even a little heavy cream takes them to the next level. For an extra treat, a dollop of sour cream and a dash of hot sauce on top, as you might spot in my photos, adds a fantastic tang and subtle kick – highly recommend trying it! It really elevates a simple potato side dish. Finally, the macaroni salad with corn, ham, and a creamy dressing is the perfect counterpoint to the richness of the pork and mash. While some might think of 'mac and cheese' with pork, this cold pasta salad offers a wonderful contrast. The elbow pasta, coated in that tangy, creamy mayo-based dressing, provides a refreshing bite. I love how the sweetness of the corn, the saltiness of the ham, and the crunch of optional celery or the vibrant spice from sliced jalapeños (like the ones garnishing my plate!) all come together. It's not just a side; it's a flavor explosion that cleanses the palate between bites of the savory pork. It's also super practical because you can make it ahead of time and chill it, making dinner prep a breeze. This combination isn't just a meal; it's an experience. The rich, savory pork, the comforting, smooth potatoes, and the bright, zesty macaroni salad create a beautifully balanced plate that’s perfect for a cozy family dinner or even a casual get-together. Give it a try, and you might just find your new favorite dinner idea!
