STEP-BY-STEP VINEGRET SALAD RECIPE
Ingredients:
Beets (boiled or roasted, diced)
Potatoes (boiled, diced)
Carrots (boiled, diced)
Pickles (finely chopped)
Onion or green onion (optional)
Sauerkraut (I ran out of my homemade, and used German sourcrout).
Sunflower oil
Salt, black pepper, and sugar
(to taste)
Beans
Cilantro and/or parsley
Instructions:
1. Boil or roast beets, potatoes, and carrots until tender.
Cool completely before chopping.
2. Dice everything evenly
Cut all vegetables into small, even cubes for best texture.
3. Add beets, potatoes, carrots, pickles, onion, beans, and sauerkraut to a bowl.
4. Add sunflower oil
5. Season with salt, black pepper, and sugar to taste. Add cilantro and parsley.
6. Mix gently until evenly coated.
7. Let the salad sit for 10–15 minutes to let flavors blend.
8. Serve chilled or at room temperature.
