Getting dinner on the table can be a real joy, especially when you know you're starting with perfectly prepared ingredients. For me, that often means whipping up a comforting batch of smothered chicken, typically with those wonderful, juicy drumsticks. But before they hit the pan or oven, there's an essential step I never skip: properly cleaning and seasoning them. It makes all the difference in the world, taking your meal from good to absolutely amazing! First things first, let's talk about cleaning raw chicken. There's a bit of debate out there, but in my experience, a quick, thorough rinse under cold running water is key, especially for drumsticks. I place my chicken drumsticks in a colander in the sink and give them a good rinse, making sure to remove any loose bits or impurities. While rinsing, I gently feel around for any leftover feather quills or excess fat that I might want to trim off with kitchen shears. After rinsing, it’s crucial to pat them completely dry with paper towels. This step is non-negotiable! Moisture on the surface will steam your chicken instead of allowing it to brown beautifully, and it also prevents your seasoning from sticking properly. Once my chicken is clean and thoroughly dry, it's time for the fun part: seasoning! This is where you build the foundational flavors for your smothered chicken. My basic go-to seasoning blend includes garlic powder, onion powder, paprika for a lovely color and subtle sweetness, black pepper, and of course, a good amount of salt. This marinating step, even with just a dry rub, makes the chicken incredibly flavorful and tender. When I'm ready to cook, I'll often start by browning the chicken drumsticks in a pan on the stovetop to get that beautiful golden crust before transferring them to a foil pan for baking with my creamy sauce.
