SANCOCHO Stew Soup is one of the favorite foods in Caribbean Islands, Latin Americans, region, few Spanish countries:

A Traditional Stew in several Countries including The Caribbean Islands, and Latin Americans Cuisine. Latin Variations Presented Popular National Dishes (Cuisine), Dominican Republic, Columbia, Honduras, Mexico, Panama, Puerto Rico, Trinidad and Tobacco and Venezuela. It usually consists of large meats, tubers and vegetables served in a broth.
I have used ingredients as follows in this soup recipe; (more veggies and different meats can be added) as per the choices of yours:
2 pounds of beef
1 pound of fresh poultry chicken
1 medium onion
5 to 7 cloves of garlic
4 to 5 pieces of squash (Spanish or American)
Handful of fresh cilantro
2 medium potatoes
1 green plantain
1 sweet potato
2 Suzzone seasoning (packet)
1 tablespoon of salt (or as per taste)
3 stems of celery
Fresh lemon juice for separate servings! Optional
Cooking time is varying depending on the type of meat and how long it takes to cook (tender)
This SANCOCHO SOUP took around 1 ½ hours to make including (preparing for the veggies).
Because of all the starches and meat in this dish, this stew tends to be thick and rich. Some of the vegetables will fall apart, giving it a porridge consistency. This is a good thing.
