Ingredients
* 1 lb Ground meat 🥩
* 2 lbs Fresh okra (Bhindi Toriyan): Washed, dried, and trimmed at both ends ✅
* 2 large (or 3 medium) Onions: Peeled and chopped
* 1 medium Fresh tomato: Chopped
* 1 tsp Tomato paste
* 1 tsp Salt (or to taste)
* 1 ts Cumin seeds (Zeera)
* 1/2 tsp Red chili powder (or to taste)
* 1/2 tsp Turmeric powder (Haldi)
* 1/2 tsp All-purpose seasoning powder
* 5 to 6 cloves Garlic: Minced or crushed
* 3 to 4 tsp Olive oil
* 5 to 6 Whole green chilies (Optional)
* 1 cup Water (or as needed)
* Handful Fresh cilantro: Chopped (for garnish)
Instructions
1. Sauté the Base: Heat the olive oil in a large pan or pot. Add the cumin seeds, chopped onions, and ground meat. Cook together for about 15 minutes until the meat is browned and the onions are softened.
2. Season and Fry: Add the tomato paste, fresh tomato, garlic, salt, chili powder, turmeric, and all-purpose seasoning. Stir in the trimmed okra. Fry the mixture for about 5 minutes (without adding water) to sear the okra and lock in the flavor.
3. Simmer: Add 1 cup of water. Cover and cook until the water dries out. Check the okra and meat for tenderness; if they are not fully cooked, add a little more water and continue simmering until tender.
4. Finish: Taste and adjust the salt if necessary. Garnish with fresh cilantro and whole green chilies if desired.
5. Serve: Turn off the heat and keep the dish covered for a few minutes before serving. Enjoy over a bed of rice or with fresh naan or roti.
