Murgh Pallawo (Chicken Pulao). A Classic, Fragrant One-Pot Chicken and Basmati Rice Dish
This traditional recipe uses a classic two-step method: first, creating a rich, aromatic Yakhni (chicken broth), and then using that flavorful essence to perfectly steam the long-grain Basmati rice and chicken together.
Ingredients
For the Yakhni (Chicken Broth)
โข 2 ยฝ lbs fresh chicken, cut into pieces
โข 1 medium onion, halved
โข 1 inch fresh ginger root, bruised
โข 1 whole garlic bulb, top sliced off to expose cloves
โข 1 tsp whole dried coriander seeds
โข ยฝ tsp cumin seeds
โข 1 tsp salt (or to taste)
โข 4โ5 cups water (to reduce down to 3 cups of rich broth)
For the Pallawo & Rice
โข 2 cups long-grain Basmati rice (washed and soaked for 20โ30 minutes, then drained)
โข 5 tbsp cooking oil
โข 1 medium onion, finely chopped
โข 1 cinnamon stick
โข 1 tsp ginger paste
โข 1 tsp garlic paste
โข 1 ยฝ tsp cumin seeds
โข 1 pinch paprika (or red chili powder)
โข 1 tsp all-purpose seasoning
โข Remaining salt (to taste)
โข 3 cups reserved chicken broth (supplement with water if short)
Step-by-Step Instructions
Step 1: Prepare the Yakhni (Chicken Broth)
1. In a large pot, combine the chicken pieces, halved onion, bruised ginger, whole garlic bulb, coriander seeds, \frac{1}{2} teaspoon of cumin seeds, and 1 teaspoon of salt.
2. Pour in the water and bring to a boil. Reduce the heat to medium-low, cover, and let it simmer until the chicken is tender and the broth is intensely flavorful.
3. Carefully remove the chicken pieces from the broth and set them aside.
4. Strain the broth through a fine-mesh sieve, discarding the solids. Measure out exactly 3 cups of the broth. Note: If you have less than 3 cups, top it up with a little water.
Step 2: Cook the Pallawo Base
1. Heat the 5 tablespoons of oil in a large, heavy-bottomed pot over medium heat.
2. Add the finely chopped onion and the cinnamon stick. Sautรฉ, stirring frequently, until the onions turn a beautiful golden brown.
3. Stir in the ginger paste, garlic paste, the remaining 1 \frac{1}{2} teaspoons of cumin seeds, paprika, and all-purpose seasoning.
4. Add about \frac{1}{2} cup of water to the pot to prevent the spices from burning. Stir well and let the aromatics blend for a minute.
5. Add the pre-boiled chicken pieces to the pot. Sautรฉ the chicken in the spice mixture for a few minutes so it absorbs the rich flavors. (If the pan gets too dry, add a splash of water as you cook).
Step 3: Combine and Simmer
1. Once the liquid in the chicken mixture has mostly reduced, add the 2 cups of soaked and drained Basmati rice along with the 3 cups of reserved chicken broth. Stir gently to combine without breaking the rice grains. Taste the liquid and adjust the salt if needed.
2. Bring the mixture to a boil over medium-high heat. Allow it to cook uncovered until most of the liquid has absorbed and the water is level with the rice.
Step 4: The Dam (Steaming)
1. Turn the heat down to the lowest setting.
2. Cover the pot with a tight-fitting lid (you can wrap the lid in a clean kitchen towel to trap the steam efficiently).
3. Let the rice steam (Dam) on low heat for at least 20 minutes before turning off the stove. Fluff gently with a fork before serving.
Serving Suggestions
Serve this aromatic Murgh Pallawo hot, accompanied by:
โข Fresh Raita or Mint Sauce
โข A crisp, refreshing side salad
โข A rich mutton curry for a complete festive spread
Making Murgh Pallawo, also known as Chicken Pulao, is a rewarding culinary experience that combines simplicity with rich, layered flavors. One of the key tips I have learned from personal experience is the importance of patience during the broth preparation. Simmering the chicken with whole spices and aromatics slowly extracts a depth of flavor that pre-made stocks simply cannot replicate. When preparing the Yakhni, avoid rushing the simmering process; this gentle extraction builds the base of the dishโs aroma and taste. Another useful tip is soaking the Basmati rice for at least 20-30 minutes before cooking, which allows the grains to elongate and results in a fluffier, separate texture after cooking. Be gentle when stirring the rice and broth together to avoid breaking the grains, which helps maintain visual appeal and an enjoyable texture. Using whole spices like cinnamon and cumin seeds in the sautรฉ step not only enhances flavor but also releases essential oils that imbue the dish with its classic fragrance. Wrapping the potโs lid with a clean kitchen towel during the final steaming (Dam) traps the steam effectively, ensuring the rice cooks evenly and absorbs all the aromatic flavors. I also suggest experimenting with serving options to complement Murgh Pallawo. A cool, tangy raita or fresh mint chutney contrasts wonderfully with the warm spices, while a crisp salad adds refreshing crunch to the meal. For special occasions, pairing the dish with a rich mutton curry can elevate your dining experience further. This recipe is a comforting home-cooked favorite that invites you to enjoy a taste of traditional South Asian cuisine while adding your own touch through careful preparation and fresh ingredients. Whether cooking for family or guests, the aromatic Murgh Pallawo is sure to impress with its balanced flavors and hearty satisfaction.
