📝 Ingredients

• 1 (8.5 oz) package cornbread mix (prepared as directed on box)

• 1 cup mayo

• 1 cup sour cream

• 1 packet ranch dressing mix

• 1 packet taco seasoning

• 2 cans pinto beans, rinsed & drained

• 2 cans whole kernel corn, drained

• 1 can diced tomatoes (I used a chili-ready blend)

• 1 green bell pepper, chopped

• 4 green onions, chopped (save a little for garnish)

• 6 strips bacon, cooked & crumbled

• 2 cups shredded cheese (I used cheddar)

👩‍🍳 Instructions

1. Preheat oven to 400°F. Grease an 8x8 pan and bake cornbread as directed. Let cool completely.

2. In a bowl, mix mayo, sour cream, ranch mix, and taco seasoning.

3. In a separate bowl, combine beans, corn, tomatoes, bell pepper, green onions, bacon, and cheese. Stir in the mayo mixture.

4. Crumble half the cornbread into a 9x13 casserole dish.

5. Layer half the veggie/mayo mixture on top.

6. Repeat with more crumbled cornbread, the rest of the veggie mix, and top with more shredded cheese.
