DINNER IDEA: LAMB MEATBALLS & GREEK SALAD

This is a Greek-inspired chickpea salad with lamb meatballs 🥗 🧆 Another yummy dinner recipe perfect for spring & summer 🍽️

THE MEATBALLS:

- ground lamb

- salt, pepper, garlic & onion powder, paprika

- chopped green onion (I added this randomly and actually really liked it!)

- 1 egg

Combine these ingredients, form into meatballs & cook until browned on all sides *over medium high heat

THE SALAD:

- chickpeas

- feta

- cucumber

- bell pepper

- tomatoes

THE DRESSING:

- olive oil

- red wine vinegar

- lemon

- honey

- salt + pepper to taste

I served these with hummus & labneh 🧆🥒🫑🍅
