Shortcut lasagna!

Shortcut Lasagana for a busy night! Quick, easy, less mess!

2lbs your choice of protein

2 box oven ready noodles

2 lbs your choice cheese

2 jars your choice pasta sauce

16 oz Ricotta or cottage chz

2 eggs

Any extras/herbs and spices you'd like!

Brown the meat, add whatever seasoningsand spices/herbs you'd like. Italian mix or basil, oregano, salt, pepper, garlic and onion powder, chili flake for heat. Drain the meat, add your sauce. I did season the sauce again, but the video was too long. Mix your ricotta, egg, seasonings until a creamy consistency is reached. layer everything, starting with the meat sauce first. SPRAY your foil before covering the baking dish! Bake at 400 for about 45 min. Remove the foil and let the top get crispy. Add more cheese if needed. Let it cool for about 10 min before serving.

Leftovers freeze well, too!

I usually like to sautée garlic and onion and peppers and things, but this was a busy night, and the kids were being picky, so I kept it plane Jane and it still turned out delicious. Served with a DIY salad bar and breadsticks.

... Read moreWhen time is tight and the family needs a satisfying meal, this shortcut lasagna recipe becomes a real lifesaver. I find that using oven-ready noodles cuts down on prep time substantially, eliminating the need for boiling and reducing cleanup. Choosing your preferred protein—whether ground beef, turkey, or even a plant-based substitute—lets you customize the dish to your family's tastes while keeping it hearty. Incorporating a mix of cheeses like mozzarella for meltiness, ricotta or cottage cheese for creaminess, and a flavorful pasta sauce creates rich layers bursting with flavor. Don’t hesitate to enhance the sauce with extra herbs and spices like basil, oregano, garlic powder, or a pinch of chili flakes to add a little heat and depth. Mixing the ricotta cheese with eggs and seasonings until smooth not only adds creaminess but helps bind the layers together beautifully. One tip I’ve learned is to spray the foil before covering the baking dish for baking. This prevents the cheese from sticking and makes it much easier when removing the foil to crisp up the top. Baking covered first locks in moisture, and uncovering it during the last 10 minutes creates a deliciously crispy cheese crust—a delightful contrast to the creamy interior. If you’re short on time but want to add veggies, quickly sautéed garlic, onions, and peppers can easily be folded into the meat sauce or layered inside for extra flavor and nutrition. This approach also helps satisfy picky eaters by blending veggies into the rich flavors. Plus, this dish freezes beautifully, making it convenient to prepare in advance or save leftovers for an easy lunch or dinner later. Serving your lasagna with a DIY salad bar and breadsticks turns it into a wholesome, family-friendly meal. This shortcut lasagna truly combines simplicity, taste, and versatility, perfect for hectic evenings when you still want to put a homemade meal on the table.
