for my homemade meatballs last night i used a pound of ground beef for about 20ish mini meatballs i added panko, garlic powder, onion powder, italian seasonings, and a little bit of cumin (measure w your heart😂) i also diced half an onion and added it in for flavor and threw in half a cup of beef broth because i didn’t have eggs! i baked them in the oven for about 25 min on 400 & then threw them into the slow cooker with some rao’s to marinate for 2 hours!

... Read moreMaking homemade meatballs can be such a rewarding and tasty experience, especially when you tailor the flavors to your preferences. What I love about this recipe is the use of beef broth instead of eggs, which makes the meatballs tender and moist without the usual binder. Adding a pinch of cumin adds a subtle depth that balances beautifully with the Italian seasonings and garlic and onion powders. Baking the mini meatballs first helps them firm up and keeps them intact when they go into the slow cooker. If you want your meatballs to soak up even more flavor, marinating them in a slow cooker with Rao’s marinara sauce for a couple of hours is a game changer. The low and slow heat lets the tomato sauce infuse into each bite, resulting in juicy meatballs with a rich tomato aroma. This method also frees up stovetop space while the flavors develop. For extra texture and flavor, finely dicing onions and perhaps even adding a bit of grated Parmesan cheese or fresh parsley to your mix can elevate the taste. Also, experimenting with different breadcrumbs like seasoned panko or even crushed crackers can tweak the crunch slightly. If you’re avoiding eggs like in this recipe, the beef broth works wonderfully, but you could also try a flaxseed or chia seed egg substitute if you want a plant-based option. Finally, these mini meatballs are incredibly versatile. Serve them over spaghetti for a classic comfort meal, use them in subs for hearty sandwiches, or even add them to a clear broth for a warming soup. With these simple steps and ingredients, you’ll always have a crowd-pleasing meal ready to enjoy and personalize.
