Paleo Zucchini Bread with Chocolate Chips

This morning I was getting ready to throw out my zucchini I didn’t eat and thought “wait a second!” And made some tasty zucchini bread, with clean ingredients of course 😉

Recipe:

2 cups grated zucchini (drained)

2 cups almond flour

½ cup coconut sugar

2 eggs

½ tsp lemon juice

1 tsp baking soda

⅓ cup melted butter, or coconut oil

1 tsp cinnamon

1 tsp vanilla extract

½ cup dark chocolate chips

Pinch of sea salt

Drizzle of honey

Preheat oven to 350 degrees

While the oven is heating…. Mix all ingredients into a mixing bowl. Stir with a large spoon/spatula until well combined and the mixture becomes thick.

IMPORTANT:

* squeeze out all excess moisture from the zucchini. Place your zucchini on a paper towel, wrap the paper towel around the zucchini and squeeze out the extra water over your sink. This is important and will keep your bread from becoming soggy

pour batter into a bread pan and bake for about one hour or until an inserted toothpick comes out clean. Allow to cool completely.
