Pineapple Cream Cheese Cobbler
Sweet Pineapple Cobbler with Juicy Pineapple Chunks, Creamy Cheese Pockets, Buttery Batter, and a Golden Baked Topping
Ingredients:
1/2 cup butter, 1 stick
1 large egg, lightly beaten
1 cup milk
1 cup all-purpose flour
1 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
2 cans pineapple chunks, 20 ounces each, well drained
8 ounces cream cheese, cut into small cubes
Directions:
Preheat your oven to 350°F (175°C).
Place the butter in a 9x13-inch baking dish and melt it in the oven while it preheats.
In a medium mixing bowl, whisk together the egg, milk, flour, granulated sugar, baking powder, and salt until smooth and well combined.
Carefully remove the hot baking dish from the oven once the butter is melted.
Pour the batter evenly over the melted butter. Do not stir.
Scatter the well-drained pineapple chunks evenly over the batter.
Add the cream cheese cubes over the top, spacing them out so every serving gets creamy pockets.
Bake for 40–45 minutes, or until the cobbler is golden brown, bubbly around the edges, and set in the center.
Let the cobbler cool for 10–15 minutes before serving.
Serve warm on its own, or add whipped cream or vanilla ice cream for an extra treat.
For the best texture, drain the pineapple very well before adding it so the cobbler bakes up golden and tender instead of watery.
