Breakfast sausage and rice skillet 🍳

Recipe serves 2-3
1 1/2 cups left over rice
1/2 link of smoked sausage or kielbasa chopped into bite sized pieces
1/4 cup frozen peas
1/4 cup rotel- cilantro and lime flavor
1/4 cup canned pinto beans in seasonings
Garlic powder, salt, pepper, onion powder
Egg- any way you like it!

In a pan add about 1tbs evoo, when warm add the rice and season it with your seasonings. As the rice gets warm and sizzling add your sausage and sate until brown about 2 min. Add the rotel and beans. The juices from these should give the rice great flavor. Cook for a couple of min. Add the peas and as they soften and cook through make an egg your way for each serving. Save your mixture in a bowl or plate and place your cooked eggs on top. Garnish with some salsa or your favorite hot sauce and serve with some sliced avocado on the side. Dig in!
