For the pine nuts I toasted them over the stove lightly for a couple of min. Make sure to watch them so they don’t burn! #fyp #dinner #pasta #food #fyppp

... Read moreThis Pine Nut Pesto Pasta recipe shines with its combination of savory and fresh ingredients, creating a meal that’s both satisfying and packed with flavor. One tip I learned from making this dish multiple times is to toast the pine nuts carefully — doing so releases their natural oils and enhances their nuttiness, but it’s important to watch them closely as they can burn quickly. For those who want to boost the pesto flavor, I recommend making your own homemade pesto if time allows, as it adds a brighter herbaceous layer compared to store-bought versions. If you want to keep it vegetarian, simply omit the chicken or replace it with grilled vegetables like zucchini or mushrooms. Using the oil from the marinated artichoke hearts and sun-dried tomatoes when mixing everything together adds a delicious depth and moistness to the pasta, making every bite flavorful. The mix of textures from the tender artichokes, chewy sun-dried tomatoes, crunchy pine nuts, and smooth parmesan creates a delightful contrast. For meal prep, this pasta also holds up well after refrigeration and can be enjoyed cold or reheated. Adding fresh basil leaves on top just before serving provides a fresh aroma and a pop of color that makes the dish look even more inviting. Overall, this recipe is versatile and perfect for a quick weeknight dinner or for impressing guests with minimal effort. The blend of simple seasonings like onion powder, garlic powder, and salt allow the key ingredients to shine. Give it a try and personalize it to your taste by adjusting the amount of sun-dried tomatoes or artichokes based on what you have available at home.

I’m going to add fresh tomatoes to this too for an extra kick like you did.
