What I Prepped for The Week✨
First food/meal prep since back from vacation and I’m so excited! I wanted to try a few new recipes and try to replicate a few flavors and meals that I had while in Belize. This week I’m making:
~Breakfast: Avocado Toast with Hard Boiled Eggs & a Banana
~Lunch: Dense Bean Salad with Chicken in a tzatziki style sauce to stuff into a Pita.
~Snack Packs: Cretan Paste and Vegetables & Pita Chips to dip. I also cut up some Cantaloupe and Pineapple and washed my Strawberries for snacking.
~Dinner: Shrimp Tacos with Spicy Pineapple Salsa, Pickled Red Onions, Aji Sauce, on Corn Tortillas.

For example, for my snack packs, I’ll cut up cucumber sticks and carrot sticks and pair them with a small container of Cretan paste and some pita chips. Having these healthy options literally at my fingertips means I’m much less likely to reach for something unhealthy when hunger strikes. I also dice up fruits like cantaloupe and pineapple, and wash my strawberries, storing them in separate containers for easy snacking or adding to breakfast. And remember those hard-boiled eggs? For breakfast, overnight oats with various toppings (berries, nuts, seeds) are incredibly versatile. For lunches, think about grain bowls with quinoa or brown rice as a base, topped with roasted vegetables, a lean protein, and a flavorful dressing. Sheet pan dinners are also fantastic for meal prepping; you can roast a batch of chicken or chickpeas with a mix of veggies like broccoli, sweet potatoes, and bell peppers, then portion them out for several days. Don't forget the power of sauces and toppings! Having homemade additions like spicy pineapple salsa, a jar of pickled red onions, or a vibrant Aji sauce ready in the fridge can elevate any meal. These little flavor boosters keep things exciting and prevent meal prep fatigue. They make even simple ingredients feel gourmet and fresh, which is key to sticking to a healthy routine.
